Grilled Avocado and Tomato Salad
10 vine ripened tomatoes, quartered
4 avocados, peeled, halved, and pitted
1/3 cup extra-virgin olive oil
2 lemons
1 red onion, sliced
1/4 cup pine nuts, toasted light brown in the oven
1/4 pound Parmesan cheese
Preparation Instructions:
Preheat grill to medium heat.
Cover large platter with tomato quarters, set aside.
Place avocado halves in a bowl and drizzle with two tablespoons olive oil, juice of one of the lemons, salt and pepper. Place each half, flat side down, on a hot open grill for about 30 to 45 seconds. Cook on the flat side only. When well caramelized, remove and place on top of the plated tomatoes.
In another bowl, squeeze the other lemon over the sliced red onion and mix well. Add the remaining olive oil, season with salt and pepper. Place onions in the empty avocado pit holes. Spoon the remaining lemon/olive oil mixture over avocados and onions.
Top with green goddess dressing, distributing generously on all sides. Sprinkle pine nuts and grate cheese on top. |

Alton Brown's Guacamole
- 3 avocados, halved, seeded and peeled
- 1 lime, juiced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne
- 1/2 medium onion, diced
- 2 Roma tomatoes, seeded and diced
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
Preparation Instructions:
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice.
Using a potato masher add the salt, cumin, and cayenne and mash, fold in onions, tomatoes, cilantro, and garlic.
Add 1 tablespoon of the reserved lime juice,let sit at room temperature for 1 hour and then serve.

Avocado Mayonnaise
1 1/2 large avocados, pitted, quartered
5 tablespoons mayonnaise
1 tablespoon fresh lime juice
3/4 teaspoon hot pepper sauce (such as Tabasco)
Preparation Instructions:
Puree all ingredients in blender, scraping down sides occasionally. Season with salt and pepper. (Can be made 4 hours ahead. Cover; chill.) |

Avocado Lime Pie
1 cup sieved avocado pulp.
1 (14 ounce) can sweetened condensed milk.
1 teaspoon grated lime zest.
1/2 cup fresh lime juice.
2 egg yolks.
1 pinch salt.
1 recipe pastry for a 9 inch single crust pie.
Preparation Instructions:
Combine sweetened condensed milk, lime zest, lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens. Stir in avocado pulp.
Pour filling into pie shell.
Chill pie for several hours. Garnish with whipped cream, and serve. |

Bacon Stuffed Avocados
8 slices crisp bacon, crumbled.
4 medium avocados, ripe and unpeeled.
Lemon juice.
½ cup of butter.
¼ cup of brown sugar.
¼ cup of white wine vinegar.
¼ cup of garlic puree.
1 tablespoon of soy sauce.
Preparation Instructions:
Slice the avocados in half, then remove pits and brush with lemon juice.
Fill the avocado with bacon.
Combine all of the remaining remaining ingredients and heat to boiling to produce the sauce.
Drizzle sauce over avocados and serve as desired.
